Do you ever blank out when it comes to thinking of veggies OTHER than the 2-3 you're used to eating?
Veggie boredom is real. And sometimes it's bizarrely hard to think of different options outside of the green stuff.
There's also the misconception that the greener the better when in reality all shades of the rainbow are crucial for our overall health.
ORANGE/YELLOW = Carotenoids
A carotenoid called Betacarotene is converted to vitamin A, which helps maintain healthy mucous membranes and healthy eyes. Another carotenoid called lutein is stored in the eye and has been found to prevent cataracts and age-related macular degeneration, which can lead to blindness.
RED = Lycopene
A powerful antioxidant that can help reduce the risk of cancer and keep our heart healthy.
GREEN = Phytochemicals
Including carotenoids, indoles and saponins, all of which have anti-cancer properties. Folate is also found in spinach and broccoli.
PURPLE/BLUE = Anthocyanin
Has antioxidant properties that protect cells from damage and can help reduce the risk of cancer, stroke and heart disease.
BROWN/WHITE = Phytochemicals
Allicin (found in garlic) is known for its antiviral and antibacterial properties. Some of these groups are also great sources of potassium.
